STARTER

Halibut Carpaccio served with ramson cream, corn crips and lime vinaigrette.
Grilled sirloin steak served with Bua tomatoes, white caprine cheese, crutons and horseradish dressing.
Spring Primroses served with chive cream, pickled onions, bread crumbs and a bean salad. 

MAIN COURSE

18-hour baked Veal is served with red wine sauce, crispy herb potatoes, asparagus and spring onions.
Oven baked Cod loin is served with gremolata purée, fennel salad, Norwegian butter sauce, and shrimp.
Rösti fritter with savoy cabbage, asparagus, Bua tomatoes and basil pesto. 

Dessert   

Tarte tatin served with caramelised apple, vanilla ice cream and caramel sauce.
Ruby Chocolate Terrine with bitter chocolate crumbs and sorbet.
Rosehip mousse served with blackcurrant sauce, granola and fresh berries.
